Don’t you find it easier to eat healthy food when the sun is shinning? Even though it’s not yet summer this summer sunshine makes me want to eat salad (really!). So I thought I would share with you one of my favourite salad recipes. It’s packed full of fresh summer flavours as well as lots and lots of nutrients. You can leave out the croutons and up the chicken if you are low carbing!
Deli Chicken Salad Serves 2
- 1 large chicken breast shredded
- 1 large beef steak tomatoes chopped
- 4 celery sticks chopped
- 1/2 small red onion
- 10 pitted black olives
- 50g croutons (baked)
- Handful of basil chopped
- 1 tbsp red wine vinegar
- 1tbsp olive oil
Mix all together and serve.
